The cacciagalli: between tradition and research

Our goal is to tell and enhance the territory through wine, which is why we have chosen indigenous grape varieties and cultivation and winemaking methods that can enhance the connection  between vine and environment. Precisely in order to respect and strengthen this deep connection, the entire estate is conducted following the principles of biodynamic agriculture.

Biodynamic Philosophy

Over time, the experience gained in the cultivation of vines, hazel, chestnut and olive trees has become a valuable tradition to be handed down, accompanied by a pure passion for the world of wine and a desire to express a love for the land and its history. Precisely to respect and strengthen this strong bond, the entire farm is conducted following the principles of biodynamic agriculture.

Aging in amphora: an ancient practice

With about sixty amphorae, the I Cacciagalli winery allocates a large portion of its production to this container that carries with it the wine culture of the peoples of the Mediterranean basin.

An ancient container, already used in Greco-Roman times, which fully respects the peculiar characteristics of the grape variety as it allows the wine to "breathe" and evolve while maintaining, or rather enhancing, its identity and its link with the territory.

At the foot of the extinct volcano of roccamonfina

We are in the territory of the municipality of Teano, between the Apennines and the sea, in the area of the extinct volcano of Roccamonfina.

The volcanic nature of the subsoil, the mild climate and the morphology of the territory make this land an area with a strong agricultural vocation, capable of bestowing products of the highest quality.

Our wines fully reflect the naturalness of the biodynamic approach, being the fruit of passion and respect for the different grape varieties and their peculiarities: we do not use any additives in the winery, we limit the use of sulfur dioxide to a minimum, fermentations are by indigenous yeasts, we do not clarify or filter.

The grapes grown are: Fiano and Falanghina for whites, Aglianico, Pallagrello Nero and Piedirosso for reds.
